Chicken soup with rice

Maurice Sendak wrote a whole book about why this dish is good, so I don't really need to tell you about it, do I? 


Chicken bone broth (with meat)
 Soaked rice
6-8 stalked celery, chopped
6-8 carrots, chopped
Optional: mushrooms (shiitake or button or both), garlic, kale/swiss chard/spinach/collards
Salt to taste
Optional: cayenne


Once your broth is made, pull out the chicken and strip the meat from the bones (once it's cool enough to touch). Cook celery and carrots, along with any other veggies you are using, in a heavy-bottomed pot until slightly soft, then pour in bone broth and the meat and bring to a boil. Add the soaked rice and allow to boil for 30-40 minutes. Salt to taste, add cayenne if desired, and serve.
