Pizza! That's right, pizza! And you don't even have to make labor intensive cauliflower crust. In fact, this is the easiest, fastest pizza I have ever made that didn't come out of the freezer. These can be made either as pizza bites on button mushrooms or as personal pizzas on portobellos, just adjust your cooking time as needed. This recipe is just for cheese pizza, but feel free to dress them up with any toppings you desire.
As many mushrooms as you want pizzas
Pizza sauce or tomato sauce
Whole milk mozzarella, grated
Preheat oven to 450. Carefully remove the stems from the mushrooms and lay out, frill side up, on a greased baking tray. Spoon tomato sauce into each mushroom, cover with mozzarella and sprinkle with parmesan. Bake until cheese is bubbly and the mushrooms are soft, about 25 minutes, then broil for a few minutes to get the cheese nice and browned.
