Mashed Cauliflower

Mashed cauliflower is far and away one of my favorite side dishes. This is the recipe that makes me not miss potatoes anymore! It is perfect with any meal you would serve with mashed potatoes, as well as a base for things like stews or soups that you would normally thicken with potatoes.


2-3 bags frozen cauliflower (you can use fresh if preferred, it just takes longer)
2-3 cloves garlic, chopped roughly
1/2 cup olive oil OR 1/2 stick of butter (don't skimp on the oil--this is what makes this dish creamy and delicious!)
1/2t garlic powder
1/2t onion powder
1t fresh ground black pepper
pinch of cayenne
salt to taste


place cauliflower and garlic in a large pot and add about an inch of water. Cover, bring to a boil and then turn down until the water is at a consistent rolling boil, but not so high that it will evaporate off before the cauliflower is cooked.

Once cauliflower is very fork-tender, dump off the water and move it to a food processor. Add the rest of the ingredients and process until it's creamy. Taste and adjust salt/spices to taste.
