Sick-Day Chicken and Spinach Stew

This is my go-to meal whenever anyone in my home is coming down with a cold, has an upset stomach, or is feeling otherwise unwell. The combination of easy to digest boiled chicken with the nutrients of the greens and the gut-calming and immune-system-enhancing properties of the spices is perfect for feeling better. It is easy, flavorful, nourishing, and delicious. 


1 lb boneless skinless chicken thighs (preferably pastured)
1.5-2 lbs greens of your choice, roughly chopped (spinach, kale, collards, or swiss chard)
3" ginger, grated
3" turmeric root, grated
2T cumin seed
2T fennel seed
2T coriander seed
3-4 C bone broth
salt to taste


combine ginger, turmeric, spices, chicken, and bone broth in a large pot. Bring to a boil and simmer until chicken is cooked through.
Remove chicken from pot and place on cutting board.
Place greens in pot and bring back to a boil.
Shred the chicken using two forks--one to stabilize and one to pull the chicken apart.
Return chicken to pot.
Once the greens are cooked down and very soft, remove from heat, salt to taste, and serve.
