"Fried" Chicken

This recipe is a favorite at my house. It's easy, cheap, delicious, and lets you feel like you're eating junk food, even though it's incredibly healthy! Serve with whatever veggies you have around--I like to have it with mashed cauliflower and buttery peas, or else with kale cooked in bacon fat and baked winter squash. 

Ingredients:

Boneless, skinless chicken thighs, preferably from pastured chickens (1-2 per person, depending on size)
4 parts Dried minced onion
2 parts Garlic powder
1 part Salt
1 part Smoked paprika
1/4 part cayenne

Directions:

Preheat oven to 400
Mix all the spices together on a plate
Rub chicken thighs down in olive oil, and dredge though the spices until they are completely coated
Place on a baking sheet and bake until the spices are browned and crispy--around 30 minutes.

That's it! Cook your sides while the chicken is baking and enjoy your meal!
